Dairy Free Pudding

1 large frozen banana
1/2 can coconut milk
1 rounded tablespoon cocoa powder

Mix together in food processor until smooth.

Cranberries and Butternut Squash

Fill a jelly roll pan with cubed butternut squash and fresh cranberries. Drizzle with melted coconut oil. Sprinkle with pumpkin pie spice and sea salt. Roasted at 375 for about 30 minutes or until soft and browned.

Dairy Free Brownie Bliss

Wow. Just wow. These are amazing. Very slightly modified from Brooke's Best Bombshell Brownies on allrecipes.com.

Ingredients:
1 cup Earth Balance, melted
3 cups white sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups all-purpose whole grain flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
2. Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
3. Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
4. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.

Almond Oatmeal Bars (dairy free and lower carb)

This recipe is modified from a recipe by my friend Brandy. Modified to be lower carb, higher protein, higher fiber and dairy free (I am sure it would be excellent with chocolate chips but then the kids couldn't eat it!).

Almond Oatmeal Bars

¾ cup whole wheat pastry flour
½ cup wheat germ
¼ cup almond meal
2 ½ cups rolled oats
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1 cup flax meal
¾ cup brown sugar
¼ cup oil
½ cup applesauce
2 eggs
2 teaspoons vanilla
2/3 cup sliced almonds

Mix the whole wheat pastry flour through to and
including the flax meal in a large mixing bowl.

Mix the sugar through the vanilla in a separate
container. Add the wet to the dry and the almonds and mix.

It'll be kind of clumpy, but put it all in a lightly greased 9X13 pan
and kind of push it down so it's even. Bake at 350
for 15 minutes. When it's cool, cut into bars.


Notes: While quite tasty these are really crumbly. Not super sweet. Next time I think I will cut out the almond meal and use a 1/2 cup oil and 1/2 cup applesauce - reducing applesauce may mean that I need to add a little more sugar too or maybe honey.

Apple-Flaxseed Donut Holes


I have been crazing donuts and since I can't send my diabetic husband to buy me HIS favorite treat and I can't take my kids and not buy them a donut (too much sugar, made with milk and no redeeming nutritional value) I decided we would try to make our own. The boys and I Modified from this recipe. They were very proud of their efforts of measuring, mixing and making a mess. I sent them out of the kitchen for the frying part.

Ingredients

* 2 eggs, beaten
* 3/4 c. sugar
* 2 tbsp. melted Earth's Balance (or butter/margarine of choice)
* 1 c. soymilk (or milk of choice)
* 1/2 tsp. salt
* 1 tsp. vanilla
* 1.5 cup unbleached AP flour
* 1.5 cup whole wheat flour
* 1 tsp. cinnamon
* 3 tsp. baking powder
* 1/4 cup flax seed meal
* 1 medium apple, peeled, cored and minced very fine
* oil for frying

Directions

1. Mix together dry ingredients in a large bowl. Mix together wet ingredients and add to dry. Fold in apples.
2. Drop by tbsp. in hot fat and deep fry until golden brown. Drain on paper towels.

Notes: Next time I will make a much smaller batch - sort of hard to halve an egg so maybe a half recipe? No one needs this many donuts in their house at one time LOL! They were really good. Crisp on the outside and almost muffin like inside. Delicious! They really need to be just about a heaping tablespoon - any bigger and they were a little raw in the middle. Would be great sprinkled with cinnamon sugar or powdered sugar (I just didn't want to add any more sugar to an already sugary treat). I may try a batch made with Splenda just for DH.

Low Carb Mini Almond Cheesecakes

Verdict - big thumbs down. The dog liked them.


1 1/2 cups almond meal
3 tablespoons butter
2 tablespoons Splenda

2 8oz packages cream cheese at room temp
2 eggs
1 tablespoon pure vanilla extract
1 teaspoon almond extract
2 tablespoons Splenda (or to taste)


Melt butter. Mix with almond meal and splenda. Divide evenly between 12 lightly sprayed muffin tins and pat down with tamper or fingers. Set aside.

Mix together cream cheese, eggs, extracts and splenda. Beat until smooth. Divide evenly on top of the crusts in the 12 muffin cups.

Bake at 350* for 25 minutes, until tops are cracked and golden. Cool. Refrigerate. ENJOY!

Low Carb Almond Cheesecake

INGREDIENTS:

* 1 and 1/2 cups almond meal or almond flour
* 3 tablespoons melted butter
* Artificial sweetener equal to 3 tablespoons sugar

PREPARATION:
Melt the butter (if the pie pan is microwave safe, melt the butter in it) and mix the ingredients up in the pan and pat into place with your fingertips.

Nutritional Information: The whole pie shell has 11 grams effective carbohydrate plus 17 grams fiber and 30 grams protein.

3 (8 ounce) packages cream cheese

25 (1 g) packets Splenda sugar substitute (1.5 tablespoons)
1 tablespoon vanilla extract
1 teaspoon almond extract

1. Mix together cream cheese, Splenda, and extracts. Then add eggs and beat until creamy.
2. Pour into a greased pie pan.
3. Bake for 35 minutes at 350°F or until cracked and golden brown.

Sugar Free Pumpkin Pie

I'm always looking for sugar free recipes. This one is very easy.

2 eggs
1 (15 ounce) can pumpkin
3/4 cup Splenda granular
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 (12 ounce) can evaporated milk (do not use fat free or low fat evaporated milk - it will make the pie watery and gross)
1-9 inch unbaked pie shells

1. Pre-heat oven to 425 degrees.
2. Combine ingredients.
3. Pour into pie crust.
4. Bake 15 minute at 425.
5. Reduce heat to 350 degrees and bake 45 minutes.
6. Cool and garnish with whipped cream.

I used an extra pie crust to make leaves to top the pie and added after the pie had baked for 15 minutes. My husband LOVED it. He said he couldn't even tell the difference between this pie and a regular pie. A big hit.

Dairy Free Applesauce Spice Cake

Dairy Free Applesauce Spice Cake

1/4 cup Earth's Balance or other dairy free butter substitute
2 eggs
1 cup whole wheat flour
1 cup AP flour
1.5 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/4 cup shortening
1.5 cup sugar
1/2+ teaspoon vanilla
1/4 soymilk or other milk substitute
1 cup applesauce

1. Leave eggs and butter sub at room temperature for 30 minutes before mixing. Preheat oven to 350. Grease 9x13 pan.
2. In a medium bowl mix together flours, baking powder, baking soda, spices. In another bowl mix together applesauce and milk sub.
3. With electric mixer beat together butter sub and shortening about 30 seconds. Beat in sugar and add eggs 1 at a time.
4. Alternate mixing in flour mix and applesauce mix. Beat until just combined.
5. Pour in to prepared pan and bake for 25030 minutes or until toothpick inserted in center comes out clean. Cool on a wire rack. Top with powdered sugar, cream cheese frosting or whipped cream.

Dutch Baby Pancake

Really naughty dessert...

DUTCH BABY PANCAKE
1/3 c. butter
4 eggs
1 c. milk
1 c. flour
1 tbsp. sugar
Melt butter in 400 degree oven in large casserole dish.Combine eggs, milk, flour and sugar in blender. Pour into casserole dish and bake in 400 degree oven 20 minutes. Serve with powdered sugar, lemon and orange juice, or fresh fruit.

Cinnamon Crepes with Pears

Pears

4 ripe pears - peeled and sliced thin
1/4 c butter (I only had Earth's Balance - soy butter substitute)
2 t cornstarch
1/2 c cold water
1/3 c brown sugar
1/2 t cinnamon

Melt butter
add pears - cook until tender (I just needed a couple of minutes since my pears were really ripe)
mix cornstarch and cold water - add to pears, stir
add brown sugar and cinnamon - boil 2 minutes


Crepes

1 1/2 cups AP flour
3 eggs
3/4 cup milk
3/4 cup water
1/4 teaspoon salt
1 tablespoon sugar
1/2 teaspoon cinnamon
3 tablespoons butter, melted (again, only had soy substitute)

1. wisk together flour and eggs, gradually add milk and water, stirring to combine, add salt and butter - beat until smooth
2. heat a lightly oiled griddle over med-high heat. pour approx 1/3-1/2 cup batter onto the griddle. Tilt the griddle from side to side and front to back so that the batter coats the surface.
3. Cook the crepes for about 2 minutes, until the bottom is light brown. Flip and cook the other side.


To serve I rolled a couple of tablespoons of pears in each crepe and sprinkled with cinnamon sugar.

Nectarine & Peach Crisp

6 small nectarines
2 small peaches
1 T sugar
1 cup oats
1 cup brown sugar
1/2 cup flour
nutmeg and cinnamon
1/2 cup butter/butter substitute

slice fruit - place in a 8x8 dish - sprinkle with white sugar. In a medium bowl mix together oats, flour, brown sugar, fresh grated nutmeg and cinnamon (to taste) -- cut iin butter

bake at 375 for 30-35 minutes (it smells so good while baking!)

Whole Wheat Flax Shortbread Cookies

1 stick (1/2 c) butter, COLD, cut it chunks
3 tablespoons sugar
1/2 c whole wheat flour
1/2 c all-purpose flour
2 tablespoons flax seed meal

In food processor process butter and sugar until a coarse meal. Add flours and flax seed and process/pulse until combined and a fluffy powder. Poor in to an 8x8 pan and press down. Bake at 325 for 20-30 mintues or until it pulls away from the sides of the pan and is beginning to get golden brown. Remove from oven. Use a butter knife to carefully cut in to pieces but leave in pan until cool. Enjoy.

Adapted from my regular Shortbread Cookie recipe

1 stick butter
3 tablespoons sugar
1 1/4 cups all purpose flour

Follow the same directions. If desired add chocolate ships at the end.
