Mexican Minestrone

2 cans black beans, rinsed and drained
2 cans Mexican stewed tomatoes
1 can corn, drained
4 medium white potatoes, chopped
1 cup frozen green beans
16 oz mild salsa
chicken stock
2 cooked chicken breasts, chopped (optional)

mix all together in crockpot, cover with chicken broth. cook on low 8-10 hours. top with sour cream, shredded cheese and avocado.
